An Easy to Make Buttermilk Pancake Recipe

Basic Batter Recipe - Ingredients for about 6-8 buttermilk pancakes.
4fl oz/120ml buttermilk.
(see below if you don't have any buttermilk.)
5oz/150g plain flour.
Half level tsp baking powder
Pinch of Salt.
3 large eggs, beaten.

Extra Ingredients to finish the pancakes
2oz (50g) Lard or Fat - for the frying pan.
Sugar, Lemon, Orange, Maple syrup etc to add flavor.

 
Making the batter....
1. First sieve the flour, baking powder and salt together in a large mixing bowl and make a hollow in the center.

2. Whisk the buttermilk and 3fl oz/75ml cold water together into a jug.

3. Gradually mix this liquid into the mixing bowl, slowly mixing in the flour with each new addition of the buttermilk liquid.

4 Finally, add the beaten eggs a little at a time until you have a smooth batter. (Consistency of smooth cream.)


Making the Buttermilk Pancakes...
1. Heat the frying pan, and place a small piece of lard/fat in the Center. Allow this to melt and spread over the pan.

2. Get the pan nice & hot and when the lard begins to smoke slightly, Then, using a tablespoon of batter for each small buttermilk pancake, place 2 or 3 spoonfuls into the frying pan.

3. Cook until nicely golden brown on the bottom - usually about 1 minute.

4. Gently turn over with spatula or large wooden spoon and cook for about another 45 seconds.

5. Serve immediately with sugar, syrup, lemon or orange poured on top.

7. Eat the thing, anyway you want. (tip - when frying never turn the pancake more than once.)

What is Buttermilk?

Simply put, Buttermilk is the liquid left over when churning butter. It's about 90 % water, 5% sugar and 3 % Casein, mineral salts and lactic, which gives it a sour taste.

Although buttermilk is available commercially in cartons, you can make a substitute for cooking using ordinary milk.

Place 1 tablespoon of lemon juice or vinegar in a measuring jug and add 300ml (10floz) of fresh or evaporated milk.Stir and then leave to stand for 10 minutes to thicken to a consistency of yogurt.
